Details
Australian Wagyu tenderloin at the top of the marbling scale. Soft, rich and best served in smaller portions than you think.
How to cook it
Reverse sear at 110°C then finish hard in a hot pan, or sous vide at 54°C and sear for 60 seconds. Rest for half the time you cooked it.
Target internal: rare 50°C · medium rare 54°C · medium 58°C.
Grading
MB refers to the marbling score — the fat woven through the muscle. MB 6-7 is rich and balanced; MB 9+ is densely marbled and buttery. Higher scores suit smaller portions.
